Mexican Rice

As a vegetarian I need complete proteins in my diet and beans and rice is one of those! Adding flavor and spicing up some rice to give it a Mexican flare is so much more fun than just plain rice. You can eat this recipe as a main dish by adding your favorite beans, we love some spiced black beans at our house. This Mexican rice can also be a wonderful side dish to whatever main dish you are preparing – such as enchiladas or nachos!
Step 1
Heat oil in a large saucepan over medium low heat until warm. Add all spices : cumin seeds, oregano, ground cumin, garlic powder, and salt.
Step 2
Add rice and stir and coat rice with spices. Cook rice until slightly toasted.
Step 3
Stir in onions and garlic and cook until onion is slightly translucent (5-8 min).
Step 4
Stir in tomato sauce, vegetable broth, and water; bring to a boil.
Step 5
Reduce heat to low, cover and simmer for 20 to 25 minutes until rice is tender.
Step 6
Garnish with chopped cilantro!

- 3 Tablespoons vegetable oil
- 1 Tablespoon cumin seeds
- 2 teaspoons oregano
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 cup uncooked long grain rice
- 1/4 cup onion
- 2 cloves garlic
- 1 can tomato sauce 15 oz
- 2 cups vegetable broth
- 1 cup water
- 1/2 cup cilantro optional
Instructions

- Stir in tomato sauce, vegetable broth, and water; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes until rice is tender.
