These delicious, chewy, spicy, tender little cookies are the perfect treat to warm you up on a cold day! These cookies would be a perfect afternoon treat with a nice cup of tea or coffee. I think they would make an awesome dessert for after an Indian themed curry dinner. There is no chilling time so you can whip up a batch in about 30 min!
Mix butter in a large bowl until light and fluffy. Add fresh ginger, vanilla, molasses, egg and mix until combined.
In a clean bowl add sugar, packed brown sugar, ground ginger, cinnamon, cardamon, allspice, and salt together in medium bowl, whisk until well combined. Set aside 1/4 cup for rolling dough balls in.
Add sugar mixture to butter and mix until combined.
Add flour, baking soda, stir until combined.
Roll into small, 1 inch wide balls, and coat with set aside sugar and spice mixture.
Place on a parchment-lined sheet pan, 3 inches apart.
Bake 10-12 minutes. You will see them puff a little while baking, after cooking they will flatten out and crackle a little on the tops. Cool on a wire rack.
