Don’t waste those herbs! If you have ever bought a little plastic container of fresh herbs from the store and throw out half of it, I have a great trick for you.

If you have leftover fresh herbs from the store or herbs growing in your garden, I have a quick trick to stock up your spice cupboard. All you need to do is wash your herbs and remove all the large stems. (Removing the large stems is necessary and helps the leaves dry out faster) lay flat on a paper towel or clean dish towel and allow to dry out for 2-3 days. Your drying time will vary depending on what herbs you are drying and your humidity levels.

Once herbs are dry just place them in a clean dry container for later use! You now have the freshest dried herbs you can get. Be sure your herbs are completely dry before storing them or you will get mold. They should be dry and crunchy when they are done.

You can also dry herbs by hanging them or cooking in the oven on a low temperature. I save those methods for bigger batches, like end of the season gardening. I will post how to’s for these methods soon.

Next and last step is to add your dried herbs to jars and label!
