Healthy & Tasty Cauliflower Thins

Replace those high calorie high gluten burger buns with these veggie thin alternatives
Who ever thought cauliflower could replace a burger bun, pizza crust, or piece of bread?
These types of cauliflower thins can be found at your local stores but they are pretty expensive. This recipe is SO easy that you won’t ever buy frozen again. This recipe makes 4 large rounds so I often double it and you can freeze the extras for later. I’ve even warmed them up in my toaster!
Step 1
Preheat oven to 400
Microwave fresh or frozen riced or grated cauliflower for 4 min. Placed cauliflower onto a clean towel, cheesecloth, or strainer. Once cool to the touch you want to squeeze out as much water as possible from the cauliflower (so you don’t have a soggy end product).
Step 2
In a bowl mix all ingredients together well.
Step 3
On a parchment lined baking sheet scoop 1/2 cup portions onto sheet, then flatten into patty shapes. These won’t spread or raise so the end result should be about the same thickness and size.
Step 4
Bake at 400 for 20 min, FLIP and bake another 4 min. Total baking time 24 min.
Cauliflower Thins
Ingredients
- 2 1/2 cups riced cauliflower - I used 1 bag (frozen) from Costco package comes with 4 total
- 2 large eggs
- 1/2 cup shredded parmesan cheese
- 2 Tablespoons cassava - cauliflower flour trader joes - you can use any kind of flour here
- 1 teaspoon dry Italian seasoning herb blend
- 1/2 tsp salt
- 1/4 teaspoon garlic powder
- 1 Tablespoon nutritional yeast
Instructions
