Move over, boring burger buns—these cauliflower thins are the new star of your sandwich game. Who knew cauliflower could transform into a low-carb hero, subbing in for buns, pizza crusts, or even a slice of bread? While store-bought versions exist, they can cost a pretty penny. Luckily, whipping them up at home is a cinch—and once you try this easy recipe, you’ll never look back. It makes four generous rounds, but I often double it and freeze the extras (they warm up perfectly in a toaster!).

Spicy Peanut Tofu

Step 1

Preheat oven to 400

Microwave fresh or frozen riced or grated cauliflower for 4 min.  Placed cauliflower onto a clean towel, cheesecloth, or strainer. Once cool to the touch you want to squeeze out as much water as possible from the cauliflower (so you don’t have a soggy end product). 

Step 2

In a bowl mix all ingredients together well.  

Step 3

On a parchment lined baking sheet scoop 1/2 cup portions onto sheet, then flatten into patty shapes. These won’t spread or raise so the end result should be about the same thickness and size.

Step 4

Bake at 400 for 20 min, FLIP and bake another 4 min. Total baking time 24 min.

Ingredients

  • 2 1/2 cups riced cauliflower - I used 1 bag (frozen) from Costco package comes with 4 total
  • 2 large eggs
  • 1/2 cup shredded parmesan cheese
  • 2 Tablespoons cassava - cauliflower flour trader joes - you can use any kind of flour here
  • 1 teaspoon dry Italian seasoning herb blend
  • 1/2 tsp salt
  • 1/4 teaspoon garlic powder
  • 1 Tablespoon nutritional yeast

Instructions
